I do not know about others but I had enough of rainy, cloudy, depressing days. I am thinking already about summer, sun, sea, warm sand and that quiet laziness that makes you think that life is indeed beautiful.
Since in the part of the world I am currently living in, the spring does not yet want to show its sunny face, I tried my best to bring a smile on its “face” with a tangy and refreshing lemonade. I did not manage to change spring’s rainy mood, but for sure it changed mine.

How to
- YIELD: 5
- 200 g granulated sugar
- 6 strips lemon rind
- 250 ml water
- juice of 4 lemons
- 1 litre cold water
Directions:
- Put a small saucepan on medium heat. Place the sugar, the lemon strips and the small quantity of water and stir until the sugar is dissolved. Increase the heat to high, bring to the boil and cook until it thickens to the consistency of a syrup (7-8 minutes).
- Remove from the heat and discard the lemon rind (strain if there are small bits in the syrup). Let it cool down at room temperature and then place it in the refrigerator.
- To serve, add the cold water to the cold syrup and mix.
