Sweet chicken clubs


What to do when you have two trays of chicken clubs and not much time to spare nor inspiration? Throw them in the oven with some condiments and cross your fingers that the outcome is not boring.
To make it a little bit different and take the taste towards sweet and sour I mixed chili, ginger and honey and surprisingly the result was great – they were tasty, not too sweet; the type of meal that you lick your fingers after. Too bad they were only 16 pieces….

Ingredients:

  • 2 tbsp grated fresh ginger
  • 2 minced garlic cloves
  • 1 red chili without the seeds and finely sliced
  • 180 g (6.3 oz) honey
  • 100 ml (3/8 cup) lime juice (around 4 limes)
  • 16 chicken clubs
  • salt and pepper

Directions:
Preheat the oven to 210°C (437°F).
Mix together the ginger, chili, honey, garlic, salt, pepper and lime juice. Place the chicken clubs in a pan that can be used in the oven or in a e tray. Pour the mix on top of the chicken making sure that all the clubs are coated, but they are not floating in the mixture.
Place the tray/pan in the middle of the oven. Bake for 30 minutes. After 15 minutes, take some of the sauce from the pan with a spoon and pour over the clubs.
After 25 minutes, try if they are done with a fork or a knife – if the juice that comes out is clear, they are done.
