Warm potato salad


This warm potato salad can be used as a side dish for grilled meat or by itself when in the mood for a meatless light dinner. Whatever remains from dinner can be stored in the fridge and heated up next day for lunch at work. At least this is what I did….;)

How to

    YIELD: 4-6 servings

Ingredients:

  • 2 tbsp butter
  • 4 medium sized red onions thinly sliced
  • 3 tbsp vinegar
  • 3 tbsp sugar
  • 5 tbsp sour cream
  • 1 kg boiled, cold potatoes, diced
  • 1 tbsp lemon juice
  • 1 tsp salt and pepper
  • 1 jar capers (100 g out of which 65 g capers)
  • dill, coarsely chopped

Directions:
Slice the onion in thin slices so they form rings. Melt the butter in a wide pan and turn down the heat. Cover and let them soften.
Mix the vinegar, sugar and cream together until the sugar is dissolved. Taste it and adjust the sourness or the sweetness based on your taste.
When the onion rings are soft, add the cream mixture. Turn up the heat and add the potato dices. Let them cook together until the potatoes are warm. Add salt and pepper. Turn off the heat and add the capers. Mix everything and sprinkle with the dill.
