Pasta is the “to go” dish when I do not have the time or the mood to make something for dinner. Fresh pasta with pesto is one of my kid’s favorite dishes – and it is more than fine with me because it ensures a dinner with no complaints and fuss.
From time to time, I make fresh pasta using this recipe and it is 10 thousand times better than the dried pasta I buy. Put this together with the homemade pesto and we have a meal that can keep quiet any fussy eater.

How to
- YIELD: 1-2 portions
- 100 g pasta flour, type “00”
- 1 medium egg
- 1 tsp olive oil (optional)
- salt
- pesto for serving
Directions:
Place the flour in a large bowl and make a well in the center. Add the egg and a pinch of salt in the well. Mix with a fork until everything is combined.
Begin kneading the dough until it is smooth and elastic. If the dough is too dry, add the olive oil; if it is to sticky add a little bit more flour.
Cover with plastic wrap and leave at room temperature for 30 minutes.
The pasta can be cut using either a pasta machine or a rolling pin and a knife.
Add immediately in a pan with boiling water and boil for about 7 minutes or until they are al dente. If not using immediately, use a hanger to let the pasta dry.
